I am just shopping for my next brew, going to make a flowers IPA and gales festival mild, both require crystal malt but looking at the malt miller, there are several to choose from, not really sure which i should go for ? the gales festival is described as a 'dark mild' whereas i would assume the ipa will be lighter in colour, should i go for a light crystal for the ipa and dark for the mild ?

MM crystal is normally crystal 80
Dark crystal is crystal 120

that doesnt tell me much PD :hmm: ...are you saying one is for mild and one for an IPA ? what is MM , neither of the recipes state a value of the crystal..just says crystal malt.

Sorry...MM is the Malt Miller

The higher the crystal number the darker it will make your brew so yes a dark type for a Mild. ( but not always .. ) its also adds a little more sweetness to the brew.

The Malt Miller sells his crystal as pale crystal with an EBC number ( color ) of bet 50-70
crystal, EBC 100-150
dark crystal EBC 200-400
and extra dark crystal EBC for some reason 340...... figure it out yourself the approximate number.

Pick and choose which one you want

Thanks guys...so given GW (graham wheeler) << i should practise what i ask<<, states 'crystal malt' i should go for the standard ?, but then given what you just said PD..should i look to the light for my IPA and go for the dark for the gales DARK MILD..would make sense i suppose...if its just a matter of colour then its not really a problem, if it is going to drastically change the taste of the beer then not so good

AAHH..EBC has it..the GW flowers IPA recipe is staing EBC of 24..i would want to go with a light crystal as the standard is 50-70 ?..the gales is stating 140 EBC..so maybe go for a dark crystal ?

Just read about crystal malts in the GW book..it does say that the recipes usually use standard, i guess he is talking of the recipes within the book.

That's right. The colour he states is the overall colour using all the malts. Unless he states other wise the standard will give the taste required.

cool...just checked out the MM with £60 order..including 25kg bag of maris otter !!...while i have your attention...i see the two recipes i am making have sugar in the ingredients..but it doesnt state where to add it...does it go in the mash or the boil ?

Stick it in the boil, about half we through.
