As topic says i currently let my wort chill overnight , but as ive recently upgraded im getting a little paranoid about losing a bigger batch,so wondering if im better off investing in a chiller . Is there anyone out there used both methods and is there a significant increase in quality by rapid chilling of wort . thanks for replys

I can't comment on the difference as I built my chiller before my first AG brew....

It does seem that the Australian and American home brewers predominantly use the overnight chill method - and that's a lot of brewers! So unless you would like to shift to the convenience of brewing and pitching on the same day, I'd suggest you could stick with your current routine and save the pennies :thumb:

So for the overnight chill method, do you just put the lid on and leave it until the next morning and then pitch?

The time between the wort finishing boiling and the yeast taking hold in the wort is the most critical time as airbourne pathogens are looking for somewhere to live. So this is one of the reasons to crash chill inorder that you can get the yeast working and monopolizing the wort as quickly as possible.

The other reason is to maximise the cold break and get all the unwanted proteins and trub out of the beer so to end up with a nice bright beer.

However as Bigyin states overnight cooling is very popular in the US and Australia :wha: :wha:

Personally I would not be happy if I didn't get the yeast in within a few hrs of the boil :thumb:

I have only done 1 AG brew and couldnt get it cool enough in the bath in the time I had so left it covered and pitched the yeast the following day, I would rather do a quick cool as it means there is less chance of something nasty happening and it would also mean I could get it all done in one day rather than having to clean up in the morning...
