Coming towards the end of the year I find I've slowly amassed a stockpile of half used hops and malt. I've got a Porter and Stout lined up before then but it will leave me with the following:
Malts: Pale 1.3kg, Cara-aroma 830g, Carafa II (Chocolate) 890g, Melanoidin 450g, Torrified Wheat 490g
Hops: Nugget 65g, Willamette 20g, Centennial 30g, Mt Hood 70g, Cascade 100g
Yeast: Safale US05 x4, Safale S04 x2
Other stuff: irish moss, dextrose
I have decided to use what I can on an APA and and a Black IPA/CAscadian Dark. Basically want to only have to buy a few kilos of pale ale malt as base and use the rest from these stocks.....
For the APA I had the following in mind:
Mash:
Pale ale 5kg
Cara Aroma 125g
Melanoidin 125g
Torrified wheat 250g
Boil:
Cascade 20g 6.70% 60 mins
Cascade 20g 6.70% 15 mins
Irish moss 1 tsp 15 mins
Williamette 20g 4.50% 5 mins
Mt Hood 20g 5.00% 5 mins
Fermentation:
US-05 1 packet
Cascade Dry Hop 20g 6.70% 5 days
Mt Hood Dry Hop 20g 5.00% 5 days
It is a pain I am out of Caramunich III (Crystal 60) as that would have been better than Cara-aroma at half the amount IMHO. I may try to adjust my Porter recipe to hold some back.
and for the Cascadian Ale
Mash:
Pale Ale Malt 4kg
Cara-aroma 250g
Chocolate Malt 250g
Carafa III 125g
Boil:
Nugget 20g 9.50% 60 mins
Nugget 20g 9.50% 15 mins
Other addition 1 tsp 15 mins
Cascade 20g 6.70% Whirlpool
Nugget 20g 9.50% Whirlpool
Fermentation:
Safale US-05 1 packet
Cascade Dry hop 20g 6.70% 5 days
Just wondering whether I need the full whack of Nugget in there and if to save all the Cascade for a dry hop? My other idea to use the Nugget was in a smash with Munich malt, but that would mean buying more malt and not using up what I have!
Any thoughts on either of these?
