Couple of questions on Coopers ginger beer kit.

Morning all

About to start of a Coopers ginger beer and have a couple of questions regarding the instructions from those that have successfully brewed this:

1. The fermentation temp is somewhat higher than the normal 18-20 deg i.e. 21-27 deg C. Do you guys worry about that or just stick to the norm?

2. Has any one used the (riddles) extra hot ginger compound with it with decent results?

3. (Ok so I lied it was a few questions rather than a couple!) For carbonation after the primary ferment do you use the normal amount of suger for bottling, or do you up it?

dont know if this will help but i make GB from scratch and ferment at 20 degrees. Its cheaper than the kits and makes a gallon. Just prime bottles as normal with 1 level 5ml spoon of sugar
 
I made one of the Cooper's Ginger Beer kit recently, when bottling I used carbonation drops, sadly it's a bit flat :( It does still taste quite nicce though :)

My next go at ginger beer was from root ginger, take a look at the fiery ginger beer thread, it cost a bit less than a full price Cooper's kit and has a LOAD morre 'feel' and taste than the Cooper's kit. If you have a big enough stock pot, or can face boiling up twice then I'd say make your own from the fiery ginger beer recipe, it is hugely better than a kit :D
