For my second brew (ever) I intend to try a Coopers Wheat beer.

What would be the best fermentation temp?

I intend to use Safbrew WB-06 dried yeast and brew short to 20L.

Using 1kg wheat malt extract, zest of 5 oranges and coriander seeds.

I would like to get it to about 5% if possible.

Any comments Chaps?

18c for more clove , 20c for more banana . I would do 20c and use wheat spray malt ( no normal or enhanced sugar ) . The wb06 is ideal for a german hefe but the orange and cori is better suited to a belgian wit which uses a different yeast that doesn't have banana but clove and a tartness .

Thanks for that, this is only my second attempt at home brewing. Any advice will be appreciated.

Im going to leave out the orange and coriander and will try wheat spray malt at 20c.

Forgot to ask, how much malt?
 
If you want to add a bit more flavour and colour you could steep 300g of carahell or a crystal (light) malt , for better head retention and a lovely taste you could use carawheat instead . :thumb: To steep use grains with around 2 litres of water and steep for 30 mins at 66c ish (don't worry about temp too much ) .

Any views on using Crushed Wheat Malt with the kit?
Like how much?

You can't steep (soak ) base malts you have to mash them to extract the sugars (which are starch and the mashing converts them to sugar) you would need to mash them for at least 60 mins and you'd need some pilsner or pale ale malt to help the enzymes convert .
That's why they call it partial extract brewing ( liquid or dried malt extract and some speciality malt)
You only use malt like choc or crystal or roasted really .

Is there any way I can use the crushed wheat malt with this kit at all? I bought 1kg of the wheat malt and 2kg Crushed Crystal Malt by mistake :doh: I only brew using kits.
 
Sure , use the 1kg of wheat with 300g of crystal and 4 litres of water . You want the temp of the water and grain to be around 66c for 60 plus mins (90 is better) then after it is done drain the liquid out and refill with another 3 litres leave for 10 mins then drain , repeat once more . Then you need to boil the water for around 60 plus mins adding around 20g of hersbrucker hops at start of boil will do you . You have now just done all grain .
Personally if you're gonna do this i would strongly recommend getting a large stock pot and throw away the kits and buy extract and you'll be making top beer .

Thanks for the advice, which I will be following in the next few minutes. At the moment I will be sticking to kits as I have a bungalow to renovate and she ain't happy that I keep hiding in the garage making my beer. When it all settles down I will think about all grain.
