I finally got the cash to start working on my 2. brew, and this time, making a type of beer i just love drinking; Wheat Beer :drink:

So, I have heard allot of good words about the coopers kits, and decided to go for their wheat beer. I'm going to order this from a local web shop, where i found the bottles i will be using from now on. At the same time, i would like to buy the rest of the ingredients from that shop (I don't have any local brew-shop...)
So, I'm looking for two different things.

1. Some good yeast that goes well with the kit
2. Something to replace the sugar with. Spraymalt / beer enhancer???

I've found one pack of yeast that seems to make sense: http://vinogbar.no/product_info.php?cPa ... ts_id=1872 "wheat beer yeast" Do anybody have experience with this brand?

I want to make the classic German wheat beer, with the mild hop bitterness and with the fantastic creamy feel to it, so i figured that picking the right enhancer would be key to this taste.

So... Is that everything i need to make this taste good, or have i forgotten something? :hmm:

I feel like i post way to long threads for the small amount of answer i search for. I hope i don't annoy you with this!!
 
Don't worry about annoying us mate. We've all been there at some point!

I've only ever used two wheat yeasts and they were both from Wyeast (liquid yeasts). By FAR my favorite for a German wheat is Wyeast 3068. I used 3333 once and it was not good. 3068 gives that wonderful banana and clove essence common in wheat beers. Ferment warmer and you get more banana. Ferment cooler and you get more cloves. If you can get that yeast, you will not go wrong.

Agree with the above. I have been brewing in some shape or form for the last 26 years and I have many, many years to go before I learn half as much as some of the brewers on the forum.

I have brewed the Coopers Wheat Beer, and its not a bad pint at all.

Well you are spoiled for choice there., The Brewferm Blanche I thought was a bit insipid and uninspiring when I used it, and similar could be said for the Danstar Munich. WB-06 does give some wheat flavours, but again muted. I've not used the Mauri Brew Weiss so can't comment. Really to get authentic wheat flavour profile the liquid yeasts generally perform try to type.

Yep, you need to go with a wheat extract really, either the Coopers one (which I assume is out of stock (not being able to read Norwegian unfortunately), but the Muntons Wheat Spraymalt is a good substitute)

Key to getting a good wheat beer is to over stress the yeast, so pitch cool, and don't pitch too much yeast. I use the German Rule of 30 for wheat beers (The Pitching Temp + the Final Temp = 30 - In C of course) So I pitch at 12C and allow the temperature to rise during fermentation to reach 18C . . .If I wanted a spicier wheat beer with more clove I would pitch at 10C and allow the temperature to reach 20C . . . or possibly push it higher during the last day or so of the ferment
 
Good post, and good answers. Glad I read this as I have the Brewferm wheat beer kit (Tarweiber?) to do this weekend.

I normally buy new yest, but in this instance i was jsut going to use kit yeast. Do you think this would be acceptable? Unlike most kits, the Berferm instructions do not recommend switching out the sugar for spray malt, so i was jsut going to use sugar.

If anyone has experience of this brewferm kit and can recommend that i use the wheat spray malt (probably not the correct name for it) that please let me know.

I normally do 2 can kits, except for when i am doing lager, and have never done a wheat beer kit before (well i did one, but it got infected)
