I did a coopers IPA with 500g medium dme and 1.1kg of honey about 5 months ago, i drank them all at about 1-2 months old and although it was a lovely beer i didnt think i could really taste the honey at all, i guessed that it must have just almost completely fermented out and therefore left no real flavour. However i was wrong, i found 3 mystery bottle in a box with some ciders i have been maturing, it turns out they were coopers ipa, and when i came to drink them they are incredibly sweet, like drinking a pint of honey.
 
You should try making some mead then! 100% honey flavoured.

But yes, the delicateness of honey can get overpowered in the wrong brew. Glad yours turned out to your liking. :thumb:
