Hi all.

I'm thinking of brewing one of these but would like to use brewing sugar as well as honey (in a kind of 50-50 scenario).
How much sugar and honey should be used for a 40 pint batch? (giving that not all the sugar in honey is fermentable)

the non-fermentables in honey are few and far between. i'd just treat it as sugar. try and use something like orange blossom, supermarket has no aroma and it's one of the good things you gain. warm the honey up with a few litres of hot water and add it to the brew to get it mixed well.

you could go for 100% too, there's no real reason to use sugar in kits other than to boost the abv and thin it out, which the honey will do the exact same job :)
