i have pressed 3 gallons of apple juice this weekend..and it is now happily fermenting very well..... :party:

im a little puzzled as its in a room that is only 14 deg, daytime and cooler at night ....

it does have a fleece on.... :D

do different brews ferment at different temps... :wha:
 
Well traditional cider was left to ferment outside over the winter until spring (I am talking 100 odd years ago here) So I guess they do ferment at different temperatures.
 
As far as I know, it is all down to the properties of the yeast that you are using and its ability to work at low temperatures.
Nottingham, for example works well down to around 14 degrees, lager yeasts will ferment at much lower temperatures than this.
The flavour profiles produced by any particular yeast will be different at different temperatures.
 
It will depend on what yeast you are using. I find my TC is happy fermenting at 12-14 deg just takes longer, but then I am not planning on drinking it until next year.
 
Many of the high alcohol yeasts can be better at lower temperatures as they can run amok.

I used a yeast that was stated as fermenting down to 10 deg. At reasonable temperatures the foam produced each time it was stirred was equal or more then the volume of liquid. It stayed in the fermenting vessel until it ceased trying to crawl out everytime I stirred it.
