Hi, I am looking to create an all grain brew to celebrate the 2019 Rugby World Cup being held in Japan. I am thinking Scottish whisky malt, flaked rice (Sapporo style for Japan), English, New Zealand and American hops, Irish Ale yeast but I'm am stuck for a Welsh ingredient (no leeks PLEASE), I thought a red malt might be good and would go well with the Irish yeast. Any suggestions for the missing Welsh element?
