I’ve just brewed a Trippel SG 1.080 FG 1.010 - 9.19% abv it’s very boozy and needs conditioning. It’s been in primary for about 3 weeks so far. Stopped and dropped out pretty well.
My options for conditioning it are.
A) leave it in the FV for another month or so to mellow out then bottle.
B) bottle it now and leave it to sit in the shed, for as long as I can resist. Hopefully a good couple of months.

I don’t want to mess around with transferring it to another secondary FV.
 
Transferring to secondary for maturation.

Westmalle - 4 weeks at 8°C
Karmeliet - 4 weeks at 0°C
St. Fullien - 6 weeks at 0°C

Fair the option I’ve discounted already.
I reckon I’ll bottle at the end of the month then, stick it somewhere out the way that I can’t keep sampling the odd one.
