Cocoa nibs

Hi all,

Well my stout has finished fermenting at day 10, reaching its target 1011 FG from a SG of 1045.
I plan to add in some cocoa nibs for 4 or 5 days before bottling, and have 150gms sitting in a little vodka in the fridge, by eck they smell gorgeous!

2 questions really, first up how long do I need to let the cocoa nibs sit in the vodka before adding to the stout, and second up I intend to just dump into the primary as I never rack off to a secondary vessel until I'm bottling/kegging, is there any issue with this?

Hi Johnny, is the vodka to sterelise them or to extract flavour? If just to sterelise a few hours should lyse any bacteria. T
 
A bit of both to be honest, I figured it would sterilise them and aid the flavour extraction as I plan to add the lot in.
 
It will probably be fine to put it in the primary. Stout flavours are pretty robust so you can get away with a lot. Personally I'd add em to a secondary and leave it for a good while to extract the flavours. T
 
Well they've been in the vodka for 8 hours, so should be sterile I guess...

I'll go cuck 'em in :thumb:
 
I bought them in a local 'hippy' health food shop :)

I also saw some in Sainsburys that looked similar packaging.

When I poured it all in it smelt like a rich chocolate liquor :)
