Having went to a lot of trouble brewing then clearing an Apple wow which I've just bottled I'm somewhat confused as to why it's crystal clear on bottling however once placed in the fridge overnight it goes cloudy!! It's an apple and WGJ WOW that was brewed in a plastic bulk fermenter then racked off into plastic 5l water bottles to clear, left for approx 4 weeks then racked into glass djs and cleared with kwik clear again, then bottled. Side by side the 2 bottles look totally different, it's not condensation as I first hoped and even once it's Sat in the glass for 20 mins or so it's still cloudy.

Any ideas??

Looks great in the wine rack and tastes fine but I'm let down by presentation :-(

Its called chill haze, I have seen this in white wines i have made, i cannot remember seeing it in red grape juice versions of WOW.

Bentonite will help remove proteins, which are a prime cause of chill haze

You can add it before or after, it's fine either way but you'll need a double dose if you do it afterwards.

Thanks guys! I've googled bentonite and read up a bit more about clearing so I'll try some next time I make a wow, the apple one I have has been cleared and matured already. Interestingly I read that adding the bentonite at the start of fermentation can stop the initial fermentation from being too vigorous and blowing through the airlock whilst helping the clearing process from day one so all good!!

I've just checked my 2 beaverdale kits that I put on 5 days ago, the sauvignon blanc came with bentonite that was added at the start, the Chateau du Roi didn't, the red came through the airlock within approx 3 hours whereas the white remained calm whilst giving off plenty of bubbles and blipping the airlock to the same degree as the red

Try a red grape juice and an apple juice (1 litre of each) you may find you prefer it to white grape and as i said earlier i cannot remember ever getting a chill haze in red grape based WOW.
