SWMBO is away for a few days this week so I'm fitting in a couple of brews around work, so there'll be a couple of late nights.

First up is a Classic American Pilsner, a pre prhibition beer with the recipe courtesy of Aleman :thumb: I've done this before and it is a really nice beer, highly recommended :thumb:

23L brew length
Pilsner malt 4680g (78%)
Cornmeal 1320g (22%) coarse cornmeal from Tesco
23g Saaz 3.1%AA FWH 7.7IBU
34g Cluster 8.1%AA 60mins 24.7IBU
20g Saaz 3.1%AA 15mins 2.9IBU
WLP833 German Bock Lager Yeast
OG1058; FG1015; ABV 5.7%; IBU35.3; EBC7

Initial mash of grain at 64C; cereal mash of cornmeal with 20% of pilsner rest at 65C for 15mins then boil for 30mins, then add to main mash to bring up main mash to 68C for remainder of 90min mash. Boil 90mins
 
This is an interesting looking brew. I've not seen cornmeal used before...and 22% is a fair wack? What does it bring to the beer? and I take it you have to cool/cold ferment this for it to work?
 
This is a beer that was brewed before prohibition, and corn or maize was used to reduce the high protien level of the six-row barley that was used at the time. It is a lager, so yes ferment cool. Although my fridge has packed up, I have a cellar at 12C at this time of year, and the WLP833 is a very good yeast for this beer with an optimum fermentation temp of 9-13C, althogh people have used it up to 16C with still a nice clean flavour.

I've got some Island Sun brand of cornmeal from Tesco, and you get a nice taste of the corn in the beer coupled with Saaz and Cluster hops. Turns out a very nice beer. Also I've not got any lagering facilities so I'm just going to condition in the cellar for a few weeks.

Well ended up with 22.6L at SG1065 so liquored back to get 24L at 1061

Quite a lot of break material in the sample, but it cleared nicely but took an age to run off
