Brewed this today, which is a pre prohibition beer, and many thanks to Aleman for the recipe and advice :thumb:

Brew length 23L, efficiency 75%

4493g Pilsner malt (78%)
1267g cornmeal (22%)

23g Saaz 3.1%AA FWH 7.7 IBU
34g Cluster 8.1% 60mins 24.7 IBU
20g Saaz 3.1%AA 15mins 2.9 IBU

Boil 90mins

WLP833 German Bock yeast, ferment at 10C.
OG1058; FG 1015; IBU 35.3; SRM 3.5; ABV 5.7%

Added 20% of the Pilsner malt to the cornmeal and rested at 65C for 15mins in a big pan on the stove with 3L/kg of liquor; got the main mash on at 64C; then boiled the cornmeal grist for 25mins and then added to the main mash. This came up to 71C so added some cold water to get down to 68C and continued the mash. It's not as complicated as it sounds.

Just cooling the wort at the moment.
