Just on with a Black Sheep Riggwelter this morning, in mash tun as I write :thumb:

This is for Autumn or even christmas :party:

Wondering about a christmas ale and using a bit of spice, cinnamon springs to mind immediatly, anyone had a bash at a christmas ale using spices :?:

It was delicious after 8 months. Go for dark, strong beers with lots of toffee and lay low on the hops.

It's worth brewing what you choose to do now for something really impressive months on, xmas is all about rich indulgence imo! might do something chocolately this year... :cheers:
 
I've got last years barley wine for this year.

When I made a spiced IPA i added the spices once it had fermented like dry hopping. That way you can gauge the flavour by sampling each day :whistle: , put your cinamon stick in a little mesh bag and into the beer so you can fish it out when it is done.
