hay lads am planing my brews for the year and am thinking for doing a cinnamon beer ( just a kit with some cinnamon wile brewing )
and was hopeing yous would know what kits mite be good for this or if u have trying a beer like this plz shout and lit me know how it was .

was thinking of doing a lager but dont know how that would work mite try a stout but dont know :hmm:

A teaspoon or two of crushed Coriander seeds is the usual spicing for a lager... Maybe worth a try

Add the cinammon after primary fermentation has finished, and let it steep for a week or so. Fermentation destroys the cinammon flavours. If you add honey, don't expect it to be honey sweet, it ferments. You end up with something nice and a bit different, but you won't recognise it as honey.

how do u think the two would work
 
If honey gives a crisp, dry, fresh finish then I'm not convinced cinnamon is the right flavour to partner with it?
I'd say cinnamon would be better suited to a richer, maltier, sweeter festive brew along with Christmas spices.

To match up wth a crisp and fresh finish, I'd be more inclined to look at a citrussy flavour or aroma. Or maybe even floral somehow.

I've never brewed with honey, coriander, citrus peel or cinnamon so this is all purely speculative, but I do know my food, spices and seasonings!!
 
Ive been through a fair bit of honey now and whole heartedly recommend the orange blossom type stuff - value honey etc doesnt leave a great aroma. I had cinnamon dark ale the other day and it was boring....no real depth in the spice, but maybe some cayenne and ginger would do that :-P
 
I made a Christmas ale, lots of crystal rye, balancing hops, then steeped cinnamon and nutmeg, and it certainly works well. I've also made honey beer with coriander and orange peel, and that works well too. I don't know, but I'd imagine cinnamon could be nice in a fresher beer; we might just be conditioned to associate it with sweetness.
