Thought I might as well post the recipe for the cider I'm making and what my possible intentions are for it.
It was basically 202litres of Don Simon pure, unfiltered, not from concentrate apple juice. Left them in their bottles in our dining room over night and then just added them all to the fermenting barrel, with a packet of Youngs cider yeast.
I've left my water heater out of it and I'm letting it ferment slowly at the room temp which is usually about 14-15 c, the room temp doesn't vary too much even if the heating is on.
The plan is to leave it for another couple of days and then put it into a secondary for a few more weeks then keg it.
I'm considering adding oak chips in the secondary or maybe a few litres of a different type of juice...
