Hello all,
After bottling my ex Moor gold clone earlier I was bored but didn't have enough time to put a brew on...perusing the forum I started reading a few turbo cider threads..
I HAD to nip out so sneaked 20 litres of apple juice into the trolley...Wilco were a waste of time...no dextrose or cider yeast!
I have a packet of CML kristalweisen yeast and a few odds n sods kit yeasts knocking about. ..or should I wait and order something more suitable?
Has anyone used CML cider yeast?
Edit...just had a look..their cider yeast comes in 5g packets...is this enough for a 20 litre batch?

Yeah - it's enough. I've done 50 litres from a 5g packet rehydrated and split between two fermenters and they got down to 1010 in 2 days.
 
usually use a notty ale yeast for my TC brews.
Basically anything fairly neutral or with a sweeter flavour profile will do. Unless you want a mega dry cider, in which case use a cider or champagne yeast
 
CML cider yeast is great IMO. I use it all the time and put another batch on top of the first after racking, works fine and tastes good, clean ferment too.
 
If you like your cider super dry, you'll probably like the CML Cider Yeast. Unfortunately my one attempt at a TC fell off a cliff at about 1 month in the bottle, and went down the drain.

These days, I'd probably be tempted to use a Saison yeast, it's just so forgiving. If you Google, plenty of folks getting good results with yeasts like Belle Saison.
 
My CML order has arrived...so I got my 20l of juice,my cider yeast and some nutrient. ...what else should I add...strong tea? Pectolase?
 
I'd add;

Strong tea or wine tannin
Juice of a lemon or citric acid
Maybe a small amount (teaspoon or so) of glycerol for mouth feel, although I have my doubts it really does anything.

I wouldn't bother with pectolase with normal supermarket apple juice.
 
I've used glycerol for mouth feel in mead, it does give a thicker mouth feel. You have to be careful how much you use though, as it also flavours a bit. Not sure you'd want a thicker mouth feel in cider any way.

I reckon so Clint, 2tsp citric or a juiced lemon, couple of tsp nutrient although some don't add any but I always have. Pectolase if you want but again some don't bother if its just clear apple juice you're using.
I usually add 2 tbag in 250 ml for a 5ltr batch so upscale to your 20ltr.
 
I've recently got into TC making, it's a good way to make something "easy" between brews. My first was just apple juice and MJ cider yeast. It's nice, lacks a bit of dimension, but still a pleasant drink and probably a bit young still. The MJ yeast is very dry. I put another one on using 2 different brands of apple juice, some sugar, a strong cup of tea, and pitched the MJ yeast dregs from batch 1.

I'd like to make a sweeter cider so will probably try a beer yeast next time.

For a sweeter cider I add 1 sweetener tab per 500ml to my tea when I make up, so for an 8ltr batch which is my usual I add 16 tabs, not over sweet but less harsh if that makes sense.
 
I usually sweeten when it comes to bottling, as I use lots of different apple juices flavourings and yeasts. So the end results are always a bit different.
Always worth tasting once its ready to bottle and make the final decision then.
