Cider recipe review tastes funny???

Going to making this later so thought I would run it past you guys first.

Aim - A clean cider with a slight farmyard twang, something similar to addlestones.

Ingredients - 21L of apple juice
2 L of cranberry to round off the flavour
1 Large mug of tea 6 tea bags
3.5 teaspoons of malic acid for mlf fermentation
Cider yeast by Wyeast ('twas going cheap :D )
Pectolase if cloudy

Method - Ferment for 10 days, rack off and add rehydrated mlf bacteria, bulk age till march at approx 10 ish degrees, batch prime with apple juice and bottle, leave till my holiday in July.

Any comments?
 
i'm doing very similar but with 1L of Cranberry and using Old Rosie Yeast. Will probably leave mine in bulk till end of May and then bottle. Probably drink in July.
 
Just finished throwing this together only used 1 ltr of cranberry in the end now to leave for a lonnnngg time. :whistle:
 
Quick update. Yeast is a strange one is ticking along but didn't develop a head at all might be because it was almost out of date but is going well now.
 
Np I used 6 heaped teaspoons of tea leaves which should add more than tea bags :thumb:
 
Well think I'm gonna bottle this today, its been a long cold winter but its finally warming up so bottling day has arrived!
 
Had a wee taste today and well it tasted well I don't really know.

It tastes ever so slightly of apples with a slight alcohol taste in the back of the throat but there's also like a flowery taste to it as well does this sound right or has something gone wrong?
 
Did you get any MLF going? If you did it should taste of a farmyard. :lol: :lol:

It will improve in the bottle.

I think you will have sold yourself short on the tannin, I would have used 5-6 tsps of tannin powder which has far more tannin. If I was using tea bags then I would have used proibably 4-5 per gallon. You could add some tannin powder to it, just mix into a little paste with water then add to the cider and stir but you will have to leave it a few weeks again. :thumb:

Sounds similar to some I have made , what does it smell like. Mine doesn't smell very pleasant , some friends said it had a musty smell ,but I'm not getting that.
 
I did get MLF and it is slightly farmyardy, will leave it a few weeks I think see if it improves, Smell wise it doesn't really smell of much.
