hi there, I'm a cider maker (and poker player) - I've got a 7 gal fermentor, and 2 demi johns on the go at the moment from last years crop. I've never used a kit to make beer, and would frown on it for making cider! What's wrong with just using apples, crushed, pulped and juiced, and the natural yeast that are already on the fruit. And (imo) it always taste better if it's a slow fermentation, at least 6 months - none of this 10 day ferment malarky.

with your cider age do you find it hard to fizz? mine is around 4/5 months old and will not go fizzy :(
 
it'll fizz if you add a small amount of sugar to each bottle before bottling, as long as it's still 'live' - ie also carry across a small amount of yeast, and don't add CT or anything else that kills the yeast. This will produce anaerobic/malolactic fermentation (without air), which gives it fizz. Bottle fermentation needs at least 2 weeks, if not more. Not too much sugar though, else it'll go everywhere when you open it, and you don't want to waste any!
 
oh well mine must be dead as there is no hope for fizz :) it's like a sherbet fizz lol

my next lot will be fizzy :thumb:
 
hi, im also a cider brewer, hoping to do a 5 gal batch of turbo when my fermenter is free :D
