Good Job I have a 12 month old 8% elderberry stout ( for the winter solstice), 2 yr 8% old barley wine (for christmas) and a 12 month old 9% scottish heavy for Hogmanay. :whistle: :whistle:
 
I made a batch of beer and bottled it a few weeks ago it was my first go at all grain and its already nice at 3 weeks in the bottle but will save the rest.I will still make a vanilla porter for the festive season to try it if i can get some co2 for my kegs.
The elderberry stout sounds great bet its lovely hope it lasts to christmas :cheers:
 
just follow a stout recipe and add your vanilla after fermentation - otherwise the ferment will bugger off most of the flavour and smell. you can have it ready in time I reakon, stouts mature easily. :thumb:
 
Hi there thanks for the reply i adore stouts and porters they are a favourite of mine i also like a nice ipa.
I was thinking of using the vanilla pods from the malt miller and some other malts from him too as the price is great.
Thanks for the advice as im new to all grain but i must admit the beer does taste a lot better compared to a kit.

It is mighty fine but at 8% I don't drink much just the odd one when I have an oatmeal stout, and I have about 150 bottles of it so plenty for the festering season. :whistle: :whistle:
 
Christmass all grain beer was a succes its now kegged and conditioning in my chest freezer an i also got the vanilla porter sorted and kegged to so its just conditioning now

barley wine and elderberry stout that sounds brilliant probably tastes good too that's the real beauty about al grain you can brew anything I have never tried wheat bear or barley wine here in scotland
