Good evening!

As I’m finding it difficult to source some Candi crystal (only needing that makes postage prohibitive) for the GH winter ale recipe are there any alternatives to use or will the recipe taste ok without it?? Looking to get my winter ales on the go ASAP!!

Thank you gents. The recipe calls for light Candi crystals so I think I’ll go all out and just throw in some golden syrup and some muscovado. What the worst that can happen??!!
 
If you're subbing muscovado sugar for dark candi sugar go for a high quality product. The cheap muscovado is often just cane sugar flavoured with molasses whereas the higher quality versions are proper molasses sugar. Billingtons dark muscovado is really nice. If you're shooting for dark Belgian candi flavours I'd be tempted to go 50/50 dark muscovado sugar and a good quality molasses.

Thanks. This is the exact same question, about the exact same recipe, that I was just about to ask.

So just sub golden syrup for light candi crystals (gram for gram?) in Greg Hughes Christmas Ale recipe.

Now to find the other stuff: star anise, cinnamon sticks, and ground nutmeg. Not the kind of things I have kicking around in my cupboard.
