Hi I going to be brewing the Brupaks special lager next and usually I leave to ferment for a week at about 18-21 degrees I am thinking of letting this brew for 10-14 days at 16-18 degrees will this improve it? Or is it to long of a brew?

10 to 14 days is ideal for most brews as long as you dont keep opening the lid it will have a c02 layer on top of the beer to protect it , even though it may finish fermenting around 7 ish days extra days is good so yeast helps clean up the brew and helps prevent a popcorn type flavour coming through (i forget the science term etc but i understand it all just crap memory at things like that ) so your doing the right thing , most brewers leave theres this amount of time

p.s if you really want to improve it buy a lager yeast this will need to be fermented around 12c though (15c max ) and to improve it even more you leave in FV for a month at around 2c (lagering) but you can choice not to do this . your kit will have an ale yeast btw (most likely) not a lager yeast

I did this with a lager yeast at 16c for two weeks then moved over to a secondary for 2 weeks at 2c. Keged it and it was rather good. Could have done with alittle bit longer to clear it properly however.

I am tempted to buy this kit again as it was pretty good.

I dont have a secondary yet but the more I do then it seems like I will get one ! How do I chill it to 2C?

You'd need a fermenting fridge (a fridge dedicated to just your fermentation)... Or some other way of ensuring that it's kept cool for a long period of time
