I want to try out some different hops and maybe even experiment with some different herbs and plants for bittering and/or aroma, gruit style.

So the thought occurred that could I mash some pale malt to 1.045ish then freeze 5L batches for boiling later and fermenting in DJ's?

yes you can , normal clean and sterile etc , some do this when brewed so they have wort for a starter for other brews :thumb:

Years ago we made a Guinness clone then demijohned 5 separate gallons and added a different yeast to each. We ended up with 5 completely different beers.

we mash grains to 1.040 then freeze in 2 litre pet bottles ideal for starting yeast off

Or bring to the boil for 10 mins and 'chill cube' in 5l plastic bottles - saves on freezer space! Then do the full boil at your leisure...
