Does anyone know if using heather in ale, does the heather need to be in flower (i.e. having the purple/bluish flowers) or not?
 
Someone just bought me "Sacred and Herbal Healing Beers" by Stephen Harrod Buhner (so officially my first book on brewing). In the recipes for heather mead and ale it states that you use the flowering heather tops. Apparantly the top 2-3 inches of the shoots are picked.
 
Be careful of the ergot fungus which lives on it :whistle: :whistle:

Heather ale production is strictly controlled because of the hallucinogenic properties of the ergot fungus. :thumb: :thumb:

Gray - I had 6 bottles of my heather and honey "Beerserker" ale the other night and at 6.7% I was seeing things, probably not hulluciantions but certainly a fun evening...felt RAF! the next morning :sick:
 
Fraoch is a heather ale brewed in Scotland.

Apparently the English either forbade or taxed the use of hops North of the border and so they used heather.

Some supermarkets stock the bottled version and I've had the draft in Glencoe- very nice it is too.

My be the brewery might give you some info.

Haven't tried it myself, although the wife got a me couple of bottles of their contemporary beer the other day, so looking forward to trying them.

I believe that Williams Brothers washes the heather thoroughly to remove the fungus.

Cononthebarber - what was your source of heather, did you go out and pick your own?

Yes I picked it myself, I live in Shropshire and found some near a roadside on the A53 just outside Market Drayton :thumb:
