Brewing non-alcoholic beer

I'm going to attempt an NA beer. I was wondering if anyone has had experience using the method outlined in the byo article below. If so, do you have any tips you could pass on? Also, how did it turn out? What style did you brew?
 
This must be fraught with problems:

You need maltiness but you don't want sweetness - is there a way to mash and remove the small normally fermented sugars? Can they be precipitated out somehow? Do you have to mash to get the dextrins? Can these be extracted without creating maltose? What about steepable grains - would that work getting flavour and body but not sweetness?


Bittering is going to have to be super-precise. Fermentation and aging must mellow bittering considerably as my AG and loads of my kits have been SO bitter at the point of pitching but much smoother after fermentation and just lovely and mellow after aging...


Interesting challenge though!
