Does anyone have any comments on the Brewers Choice dry kits, you just add boiling water to the dry ingredients to re-hydrate before adding remaining water. I was thinking of trying one and any comments would be grateful.

Also I have a cider kit in the FV but have read that it would be better to use apple juice and S-04 yeast. Does it matter how much yeast is added or is it not important as the yeast will only continue to ferment until all the sugars in the juice are used up.

Look forward to some of your views.

cannot help you on the dry kit, the instructions on these things are getting better so those should be ok.

As to the cider nothing wrong with a cider kit you can use the yeast with it, if by apple juice you mean use that instead of added sugars then yes go for it. S-04 gives a fruity taste so goes well with ciders but cider yeast is better, and liquid cider yeast, WHITE LABS ENGLISH CIDER YEAST -WLP775, is supposed to be great.
