I'll crack it over the weekend for a taste and then see if I want to do a brew. Any photos of your last brew mate??? you did a wheat am I right?
 
yes a standard wheat grain style but with no fruitiness and little clove using an American style wheat yeast also i've added a little biscuit malt and did so this time too , very nice and pleasant , alas no pictures , will have to try and remember next time , ive got wlp300 to brew again soon and i've just ordered a wlp351 bavarian yeast to try out soon , also reordered wlp400, made a lovely wit with that last time too :D

Interesting that went for 60% wheat malt and 40% lager.

I'd read that this is fine if you use US 6-row which very high diatastic power. However, with European lager malt you can only use 40% adjuncts (i.e. wheat malt) in the mash.

Consequently yesterday I brewed:

500g Munich (which converts itself)
2.3kg lager malt
2kg pale wheat malt

As you can see I ignored my own advice and almost went for a 50/50 split of lager and wheat malt. Mash was fine and I got 81% efficiency which is as good as another I've had before. Now I'm curious too see if I could increase the wheat bill in future batches?

Thoughts?

not sure where you read that from but the average wheat is 60% some recipes call for 70% wheat which i've brewed and happily drunk .My current supply of weissbier is 60% wheat and that's what i almost always brew ,p.s its not lager malt i use i use belgian 2 row malt (german would be better) and try get some german wheat because when i tried the British wheat it was just not as good (malt miller sells it ) and 500g of munich seems a little high to me i would try around 200g next time but then again we all like different things :thumb: p.p.s using liquid yeast will make a massive difference wb06 is ok (dried) but no where near as good as liquid
 
I think Belgian two row malt is going to be similar to the Crisp Lager malt that Malt miller does? 6 row/2 row is only a North American thing as all Euro lager malt is 2 row.

I'm getting all this from Randy Mosher's Radical Brewing. I infusion mash for a couple of hours at 145F, and I'm just worried that increasing my wheat bill will make my mash sticky?

WB06 is what I'm using. I've had good success with rehydrating the yeast 2 or 3 times in the first 24 hours so we'll see how that goes. Too tight to buy the liquid yeasts just yet.

With regards to Munich, thanks for the tip. This is my first weissbier so I'm going in blind. It's a style I've really fallen in love with so I'll be brewing another in a month or so.
 
hay there pittsy i have 11 starter bottles in my fridge i made with wlp300 i did have 12 but used one hef 00000 man it smells so dam good i was going to stick a few bottles on here :thumb:

i will/have shortly some 50 yeast starters in my fridge now , if i was you i'd try and keep at least 8 cuz you want around 2 of em to make another 12/10 when the're used up and the other 6 will keep over 6 months and a lot longer if you freeze em , but i love wheat and brew it often
