Is this a daft idea? I bottled most of a batch of Dopplebock the other day and kept 1 gallon back, racked into a DJ. I was thinking of adding brett (dregs of a bottle of Orval) and maybe a little dry hop to the DJ. I definitely want to mess about with brett a bit more this year, but is this the wrong beer to play about with? In my head it will work.....😆

Right, the dregs of a bottle of Orval have been in this for a week now and, after an initial burst of activity, fermentation seems to have all but stopped. I know I'll get 'brett creep' for a while yet, but I'm turning my thoughts to a dry hop. I've got a few options, but for a couple of reasons I'm leaning towards Chinook or Cascade. At a push I could use Mosaic, Amarillo or Enigma. I've probably got some other new world hop I've forgotten about, but no 'British' hops. All my noble hops are in whole cone form so unsuitable.

Anyone got an opinion? Ta.
 
Note to self: putting dry hops into a DJ with very little headspace is a very bad idea 😂😂😂

Evening. This is bottled and is getting there in terms of carbonation. I'm not sure what to make of it, would appreciate feedback so will send a bottle if you pm me your address. I think that it isn't finished carbing yet and when it is it will be drier and sharper which will improve it.
