Hi there,

Looking for advice.
Gonna do a brew this weekend and have the following grains available.

5kg of Maris
500g each of Cara aromatic malt, biscuit malt (50 ebc), and Special B (500 ebc),

If I put all the above in a brew would it be too much.

Short answer. Yes!

That much special B in particular would give it a very sweet cloying flavour. I think most people would recommend sticking to about 200g max. Also I think the biscuit malt and cara aromatic are both going to give a big toasty malty hit.

I think if you used all of them you would end up with something like a strong sweet porter.

I found 300g of amber malt (similar to the biscuit malt) gave a very toasty biscuity flavour.

Presuming you want something like a strong red/amber ale I'd go with

5KG Maris Otter
200g Special B
300g Biscuit
200g Cara Aromatic

This would still be a sweetish, full-on malty beer. The Cara Aromatic may not be necessary at all.
 
Acutally, I've looked up the Cara Aroma malt which I wasn't that familiar with. It is darker than I thought and looking at Weyermann's description it sounds like another dark crystal malt. It is going in the same direction flavourwise as the Special B so I really wouldn't put the two of them in the same beer unless I was cutting back on the Special B to replace it with some of the Cara Aroma.
 
great cheers for the info. ill put half the special b and half the biscuit malt and keep the cara for another time.

Hi,I recently bought 2.5kg each of Best Cara Amber Malt Crushed (BESTMALZ) 70 EBC and

Chateau Cara Ruby 50 EBC.
I have 15kg of Minch pale ale malt and a variety of hops for experimenting with.The hops are as follows
First Gold 100g Alpha Acid 6.7%


Glacier Leaf Hops 100g Alpha Acid 7.2%


Junga Leaf Hops 100g Alpha Acid 11.1%


MILLENNIUM Leaf Hops 100g Alpha Acid 17.1%


Bullion Leaf Hops 100g Alpha Acid 7.2%
I have been BIAB with a 15 litre pot and have made a few brew's using the pale malt grains and I'm wondering if anyone has any of the above or could point me in the direction of a decent brew.Any info would be great.
