Hi

Having made gooseberry wine earlier this year, I went to bottle it today. I have prepared fresh demi-johns in order to rack off from the sediment and mix with Campden tablets. I had some 'help' and the first demi-john is now cloudy! How long can I let it settle before I must bottle it?

If you have let it clear naturally since fermentation then the sediment you've picked up should settle back down within a day. Some folk don't mind sediment, is plenty of shop bought reds that have it, its entirely up to yourself if you bottle it with or without it.
 
Thank you Chewie. I haven't had a chance to bottle it yet (events took over), so it has cleared a bit more. I was more concerned about how long I could leave it - or can I leave it indefinitely - I would like it to be clear (I don't mind the sediment at the bottom, but shouldn't I lay it down straight away, in which case the sediment would finish up on the side. Or do you leave the bottles upright for a bit before laying down?

I have got the Kwik Clear Finings, comes in 2 parts, you add one and then the other half hour later. You will notice the differences within the hour but they reccomend 72 hours to settle completely.
 
Thank you Crazy, but are they fishy finings? I'm veggie.

It was nice and clear before somebody 'helped' me!
