I tap all my beers on bottles, and let the bottles take care of the carbonation stage. I give them 2 weeks to build up pressure, before i put them in my fridge / beer cellar, and let it age from there.

As everybody knows, allot of beers can benefit from aging, and it got me wondering; will i get better result if i avoid popping it in the fridge? Let it age for a good while in room temperature? By doing it that way, the yeast wont be killed, like it does when cooled down..

if you don't store the beer at a lowish temp (9c is cellar temp i'm told is ideal) then it will reduce its shelf life , plus too warm can gain off flavours
