I'm looking to do a blonde beer for my next brew but I'm wondering how to go about it. I know it's supposed to be a "hybrid" but I'm not sure what malt etc to use. I do however want a very aromatic beer perhaps using syrian goldings and an abv around 4% any suggestions?

Hi Paul,

I love blonde/golden ales, easily my favourite style

You can use normal pale malt to make the ale if you like, or if you want to thin out the body a little, blend pale malt with lager malt in any ratio u like, depending on how light u want it. I would also use 250g or so of a low colour crystal malt and/or flaked barley to get that grainyness or sweetness into the beer, and mash it a little on the cold side (63 oC) and slightly thinner (use 2.7-2.9L per kg of grain). That will make it dry and bring out the full lovelyness of the hops. Other than that, the precedure is the same as for making a normal pale ale.

Look up a beer called Styrian Stunner on the CBA website if you want an example hopping schedule for Styrian. Its a lovely beer and ive borrowed that schedule many a time, to good effect. The final result was quite a strong hop sweetness from the goldings, and would work very well in a blonde also.

Hope that helps :)

That's good advice  I'm a blonde/golden/pale ale fan too and I first made this beer in 2006, and it was stunning, though simple, still is.

If you're on the look out for a really good (fantastic IMO) recipe book you wont go far wrong with Marc Ollossons 'Real Ales for the Home Brewer'. It's now out of print but copies can be had on amazon like here

I've got quite a few 'recipe' books and if I had to chose to keep one it would be this one.
It also has another great pale in it called Townes IPA IIRC

Cheers guys :thumb: Blonde ales are also my favourite. The CBA website seems to be down at the moment but I'll keep on checking I'll have a look at that book too Vossy :thumb:

I make my blondes with lager malt as the majority of the grist.
To this, I will add a little wheat malt to aid head retention.
You could also use lager malt and munich....munich adds a touch of sweetness and a golden (slightly red) colour.
I've a thing for Amarillo hops at the moment and they work well as a single hop with the grain bills above.

Cheers Mark, what yeast would you use?

Nottingham, or US05 would be good choices.

Golden Promise or Optic malts are very pale (much more so than Maris Otter), Or there is Extra Low Colour Maris Otter. . . . a 50/50 mix of pale and lager is another alternative.

With perhaps 1-2% or Carapils for body (It's a German Crystal malt - very pale)

Try the Lancashire Blonde . . . The Stryian Flavour is Big Bold and Brassy

Cheers AM, I like the look of the Lancashire Blonde, lots of Styrian, just what I'm looking for ;)

Just a little digression, but a couple of months back I had a beer called Yorkshire Blonde from the Ossett Brewery (and a very nice beer it was!) so I decided to google it and....My eyes MY EYES!!! I had forgotten my google isn't just a beer search engine. I also did a similar thing recently when trying to do a little research on a recent BBC 2 Programme "Swinging Christmas"

That's a steal
Once you get it, if you search for the beer names both on this forum and Jims, you'll see how popular the recipes are :thumb:
