Got things cleaned and ready, and this lot is going in tomorrow ....

3kg Simpsons maris otter
1kg simpsons best pale malt
500g spelt malt
200g cara what
200g acid malt
200g oat malt
50g chocolate malt

Aiming for a nice middle of the road bitter ... but got carried away with the malt list :)

Hops to be decided tomorrow from what I've got left in the freezer.
 
This recipe calls for 25g of pacific gem, which I haven't got. I swapped it for 40g mix of challenger and northern brewer. Hopefully I got that about right, more to get the same IBU bitterness?

Interesting reading about the pacific gem being really high acid, which means you need less, so less mess and wasted beer? Clever!

Got some Goldings for the aroma hops later.
 
I read somewhere that a smaller amount of high AA hops gives a harsher bitterness than one with a larger amount of lower AA ones formulated to the same IBU. No idea if this is the case, planned to do a split batch smash to test it out but never got round to it. Might resurrect that idea.

Has anyone ever tried freezing a bucket of water to water down with? Thought that might be a quicker way to cool the thing down ready for yeast to go in.
