Best additional ingredients and yeast for stout?

Hi!

Well, the time has come to do a stout kit. I have now done a couple of wherry, a Tom Caxton Ale, and three or four of the Youngs brews. I have just kegged the Scottish Heavy and can't wait.

So - I have an Irish Velvet on the way with some Extra Dark spray malt. I have also read really good things about adding black treacle. How much do you add, and is this in addition to the suggested ingredients, or in place of some of the sugar? I was thinking about 500g treacle and 500g malt in place of 1kg sugar, but would welcome advice.

Finally - I have Nottingham, Windsor and Safale S-04 at my disposal. Are any of these particularly recommended for stout?

Randy Mosher's "Radical Brewing" has a list of ten things you can use to enhance your stout. I think molasses or treacle was one of them. I'm assuming this is extract and not AG? It might be nice to get some toasted oats in it somehow via partial mash or something. You could also try some flavorful sugar like demerara or jaggery or something unique.
 
Nottingham is by far the best for a stout :thumb:
500grm each seems about right, you can always adjust next time.
 
Thanks for the replies! This is an 'out of the tin' kit, so partial mashing of things is going to be a bit of a fiddle at the moment. I will go for the 50/50 treacle and extra dark spray malt in place of the sugar and use Notty to get it all together. :thumb:
