Hi,
First brew since march - a duvel 32 litre batch, which I aim to flavour 10 litres of with coriander and orange peel. I have put all the brew into secondary and have added more sugar solution,as per method. I am not going to be able to do anything with it until next friday, which will mean 10 days in total in secondary. Temperatures are taking till mid morning to lift to 19C with brewing elements in ye ole shed. Would it be best to let it coast at these fluctuating temperatures, or simply switch off about five days in to limit infection potential? :hmm:
