Just done myself a coopers blonde kit and the SG was 1.042 but it possible for me to get it down to 1.002 so I have a 5.3% beer?

Probably not easily. I'm assuming it was an extract kit? If so, they probably did not mash for high fermentability when making the extract. If you wanted higher abv, it's easier to add ferementables at the beginning to get there than try to get it to ferment down to near water SG.

If you managed to get it down to 1.002 it would taste   thin with no body. As Phetabs says if you wanted a higher ABV you should have added more fermentables. If you just added sugar then again it would taste thin so malt extract would be better. Beer always has residual body and sweetness which is due to the unfermentable sugars which were not converted during the mash process.

You can easily throw 500g of dry malt extract or beer enhancer in to boost the abv - just dissolve it in hot water, allow it to cool (or you'll kill the yeast,) then lob it in and allow it to ferment!

I started it today at 3pm so do you think it would be ok to throw in the malt tomorrow?

Definitely! It'll probably even referment once it's cleared out as long as it's on the yeast cake - that's how responsive yeast are - is?

You need to add 0.7kg of DME to get around 5.4%. 0.5kg will give you 5%. Quantities are probably roughly the same if you're using beer enhancer.

If you get a 1kg bag, don't chuck it all in for the sake of it - get it where you want it, and keep the rest, it will almost definitely come in handy at some point!
