Any suggestions?

As long as your temp is staying below 21-22 then it will be fine. It is better to havy a healthy ferment than a slow one which runs the risk of infection as healthy yeast will out compete any nasties.

It's going well. Very well.

On a separate topic, I note your immersion heater is not fully submerged... are you sure this is OK? I ask as the thermostat in mine is in the top and mine needs to be entirely submerged.

My one has a line on it about 3/4 of the way up that says "minimum water level" so think its alright...its not turned on at the minute anyway as this insane ale clearly doesn't need it! :)

Cover with strawberries and cream...

Hey Presto ........

Pavlova

Yeah I decided to just do away with the airlock as its obviously not up to the job and all the foam is just bubbling through the hole now...at least I know that the top won't pop off again!
