right, theres a wealth of knowledge on here...lol... so i thought id pick your brains.... has anyone got a really good recipe for a sticky barbeque sauce for ribs/chicken ...... heres hoping, thanks
 
Maple syrup is a great and underrated BBQ marinade IMO, especially for ribs or belly pork. You'll need to concentrate it first though or it'll be too thin, and you need to add some salt to balance the sweet, so simmer it in a pan with some dark soy sauce (roughly three parts syrup to one part sauce) until it's the thickness you want.

I also use it (without the soy) on chicken breasts wrapped in smoked streaky bacon.
 
my italian friend is a chef , she said sweet chilli sauce red sauce maple syrup and soy sauce . It's lovely !!
 
Maple syrup and chilli powder if you want that sweet heat hit.

I've used tomatoe ketchup as a base and mixed it with other additives as well in the past, herbs, spices, whatever you think will work for your pallette, bit like brewing your own beer, start with a concept you like and tweak it until you really like it :D

I'd advise trying any new recipe out before passing it to your guests, but that's part of the fun, isn't it? :)
 
Cola reduced to a syrup is proper tasty basted on ribs, with a bit of all spice and a pinch of salt of course.

I suspect that, if you're feeling lazy, the soda stream syrup would do just fine.
 
Can't immediately find the quantities, but my mum passed on a great BBQ sauce which used the following ingredients. I've made it several times, but I do it 'to taste' anyway. Try a tablespoon of each of the sauces and sugar here, to 1 onion, 1 tin toms and 1 clove garlic and you'll be close. Adjust to taste. Reduce (boil off) as desired for stickiness. It's all about the balance of the white wine vinegar vs the sugar, I think, and tasting as you go.

Finely chopped onion
Tinned chopped tomatoes
Soy sauce
Worcester Sauce
White wine vinegar
Brown sugar
Salt&Pepper
Garlic

I've been using his rub for pork shoulders and its really, really good.

He also recommended me "Slow Fire" by Ray Lampe (aka Dr BBQ) and its an awesome resource for al things BBQ. :thumb:
