Hi all.
I'm attempting to make an extract recipe for Bath Gem. I found an old link on Jim's Beer Kit with the following quantities, apparently from the brewer at Bath Ales:
Maris Otter 91%, Crystal 4%, Wheat 4%, Chocolate 1%.
Hops Bittering Challenger, Aroma Goldings to IBU 22-25
My main question concerns the wheat. I understand that you can't steep wheat, so am wondering what people would suggest for an extract recipe? Apparently for this recipe the wheat is almost exclusively for head retention so I'm thinking of swapping it for Carapils. So far I've got the following:
Extract:
3kg Light DME (90.5%)
Steeping:
130g Crystal (4%)
130g Carapils (4%)
50g Chocolate (1.5%)
Hop:
27g Challenger 60min
30g EKG 5 min
FG 1.049 ABV 4.8% IBU 23
