Base malts for stout

Hi Brewsters
I’m trying to use up old grains but am very low on MO base (750g) so was wondering if you could use Light Munich (1.5kg) and Vienna (2.9kg) malt as alternatives in a stout?
I’ve also got 2kg of brown malt, aromatic, roasted barley, carafe 3, plenty of chocolate malt plus some odd purchases I’ve never used e.g. mellanoidin, dextrin and biscuit.
Would an impy stout work with mix of Munich, Vienna and brown for base?
Any recipe advice greatly welcome 🍻

Are you using up hops too?

Cascade @ 60 min seems a little wasteful, unless that's just my preference for cascade flavour & aroma.
Good point Stu, I have centennial, cascade, mosaic full packets, 40g magnum. Also have home grow EKG 150g , Fuggles 100g but wasn’t sure if I should use them as the AA isn’t known but could use a typical values?
What sort of IBU would you aim for with the malt bill?
 
personally , I think your bu:gu is about there, but I tend to go low due to past beers being overly bitter (probably water profile).
