Well as a new brewer having only done but a single AG brew I might be forgiven for asking about what might be clear to some. But I want to ask before ordering some grain all the same.

Base grain, this seems to be primarily Maris Otter or any other generic "pale" grain from what I might mistakingly be seeing. But in general is anything that marked as a pale grain OK to use as a base or are there other factors?.

Any malted barley that is light in colour, up to and including Vienna malt is fine for using as base malt. Not that Maris Otter is any better than other malts, just different. I think it's becoming more common to see other grains named, but a lot of places still just brand everything as Pale Malt. Bit of a Propino fan myself.

Looking at the table, I'm tempted to see about 2 different packs of base malts, about 10kg each maybe, with a few non base malts to experiment with. Will likely try as many as I can in time. But yes, if a supplier simply marks their base grain as "pale" than state exactly what it is, then we could end up with anything then.

Not so bad if you can see the actual type named on the packet to know for future reference, but if only ever marked as "pale" then it could be frustrating. But certainty some interesting profiles on that lot, might even print that out in the near future to fine tune personal favourite recipes.
