How big is the pot? There is no difficulty in doing an all grain small volume Barley wine. . . you do not need to worry at all about mash pH, it just works . . .for making minor corrections to an already good beer then consider water treatment, but in no way is it essential (Despite what Palmer and other authors imply :twisted: :twisted: :twisted: :twisted: ) . . . I think you might have difficulty getting hold of Special B as it is malted by Breiss Maltings in the US, and is a trademarked product (Another reason to hide the palmer book!), but try replacing it with Dark Crystal as a substitute, although Hop n Grape have a Belgian Special B (Not the same thing though
). I'm also not sure about using Wheat extract either, you would have about 25% wheat in the final product, and I think if you just used extra light spraymalt you will get a great beer. The sweetness that wheat can add might very well be a bit overpowering in a sweet barley wine anyway.
I would also only add the DME towards the last 15 minutes of the boil as well, so that you extract the maximum bitterness from the hops . . The honey I would put straight into the FV
