I was thinking of making a batch of barley wine, and because I only want 10 litres, I could do an AG mash in my large pot. Little more work, but im prepared to take the plunge. I was however wondering if I could get good results from extract + speciality grains?

For a barley wine, I think you probably could get decent results. Are you wanting to do a partial mash or purely extract with some steeped grains?

Graham Wheelers book gives a recipe for Robinson's Old Tom Barley Wine (mighty fine) and also gives the recipe for using malt extract. I used to work in robinsons pub were we had it on draught. We only served it in half pints (well you could have 2 halves in a pint pot if you were foolish) great beer.

Sorry we can't post the recipe because of copyright. However the book is

Graham Wheeler - Brew Your own British real ale

Hope that is of help. You could try googling the recipe you may find it out there.

Cheers

Thanks, I will add that book to my Amazon wishlist. As for what I want to do, I just want to make the best barleywine I can first time round. I have had excellent results with extract and speciality grain, so I am ok with that. I am kind of interested in partial mash, and of course all grain. However I have never done a mash before and I am kind of scared. I know the mash pH has to be right, as does the temperatures, and I dont have any equipment more advanced than a 11 litre pot and fermentation gear.

I know for one thing, i don't want to just use a tin! http://www.brewuk.co.uk/store/young-s-harvest-barley-wine-24pt.html

This is my recipe so far: The Philosopher! (10 litres)

1.0 Kg wheat DME
1.8 Kg Light LME

0.11 Kg Special B

20.0 g Admiral (60 mins)
16.6 g Nugget (30 mins)
11.0 g Challenger (10 mins)

0.35 Kg Honey

London Ale Yeast (Wyeast #1028)

Estimated Alcohol = 10.19%
Colour = 49.5 EBC
Bitterness = 65.2 IBU

First off . . . go and hide the Palmer book in a very secure dark location . . then come back here

Done that? . . . Right now inhale . . .And Hold it . . . . .

and Breathe . . . . . There now you should be feeling much calmer :D

How big is the pot? There is no difficulty in doing an all grain small volume Barley wine. . . you do not need to worry at all about mash pH, it just works . . .for making minor corrections to an already good beer then consider water treatment, but in no way is it essential (Despite what Palmer and other authors imply :twisted: :twisted: :twisted: :twisted: ) . . . I think you might have difficulty getting hold of Special B as it is malted by Breiss Maltings in the US, and is a trademarked product (Another reason to hide the palmer book!), but try replacing it with Dark Crystal as a substitute, although Hop n Grape have a Belgian Special B (Not the same thing though ;) ). I'm also not sure about using Wheat extract either, you would have about 25% wheat in the final product, and I think if you just used extra light spraymalt you will get a great beer. The sweetness that wheat can add might very well be a bit overpowering in a sweet barley wine anyway.

I would also only add the DME towards the last 15 minutes of the boil as well, so that you extract the maximum bitterness from the hops . . The honey I would put straight into the FV

Thanks for the notes. I will continue my endeavour. Just to let you know, I am doing a PhD, so the idea of being overly technical is pretty normal to me. I just want to make a stunning barley wine first off.

Any recipe you can recommend? Any comments on mine?

Are you wanting to do a traditional English BW or an aggressively hopped American one like Sierra Nevada's Bigfoot (which is fantastic btw)?
