Hi all. I have been a winemaker for many years and have always made banana wine in a similar way,simmering the fruit for a while in water in a jelly bag,then straining,adding sugar etc etc. As I tend to do 3-5 gallon batches,it takes a lot of gas on the hob! I have today instead thinly sliced the fruit and poured on 1.5gals boiling water,which I will top up to 3 gals later(14lbs fruit),then add sugar,open ferment and strain into DJ`s later in the week. Has anyone tried anything similar with Banana wine before? And am I just heading for unsievable sludge by Friday....
