Yea it should be way more sticky and runny than a normal dough.Mines a bit runny... Will kneed and shape later, fridge overnight and cook in morning

They sound awesome! Definitely going on my list to makesThanks for starting this thread JFB. I’ve had mixed results previously on my sourdoughs , some good some mediocre.
I’ll be baking at the weekend so fingers crossed.
Just mixed some of my spent starter with a bit of left over mash and made potato pancakes , were pretty decent with my leek n potato soup ..

Had for lunch with homemade pickles and chutney.
Tasted bready and slightly sour but texture of old boot - wow it took some chewing.
Two main problems:
1. Failure to read, understand and follow simple instructions
2. Failure to read, understand and follow simple instructions
In the fridge I have day one starter and the unused starter from the bread. I guess the day one should have been with the rest? Is this now Jeffrey or the mother of all sour dough?
