Hi,
I’ve not been here since last December (2018) and I’ve just recently got back into brewing. I’m still brewing beer using kits, but I’m now supplementing the brews with different sugars and flavourings to alter the taste, and I’ve also branched out into cider and red wine (from home-grown grapes).
One thing I’d like to do though, is brew some liquorice beer. I have looked for recipes, but they all seem to talk about brewing with liquorice root (either in the boil, or part way through the ferment) and I’d actually like to do a brew with sticks of soft liquorice. I’m considering using a Wilko Sweet Newkie beer kit (which came out lovely when I did a batch recently) as the base. I’m thinking of dissolving the liquorice sticks up in the boiling water and adding it at the beginning with the tin of ingredients, stirring it all together, then adding the final water and yeast and see what happens. I realise the sweets will add extra sugar, so I may not need to add as much sugar to my brew. I’m happy to have quite a strong liquorice taste, so thought about adding a bag or 2, (200g per bag). Am I way off the mark with that amount?
