Did an extract IPA a few weeks ago and bottled about 13 days ago. Couldn't resist any longer so cracked one open tonight. When bottling, the sample I tried had a strong alcohol taste, but now it has a taste and smell of apples. It's pretty flat as well, no bubbles, but does taste slightly fizzy on the tongue. Hasn't cleared too well either. Anyone any ideas whats causing the taste? Will this subside with time and more importantly is it ok to drink?

Thanks everyone. Think I'll leave it to condition for a few more weeks before I try it again. Should I leave it inside in the warm for a bit longer or put it in the garage where its cooler?

a month in the warm is usually my staple for bottling...in fact, I usually chill a few days before drinking and leave them in the warm otherwise! that way you'll get nice fizzy beer with plenty of head and lace :drink:

What you can taste there is called ACETALDEHYDE and is formed before the yeast has completely converted your sugars into alcohol. As the the guys have said it will improve but a point to note is that this can be caused by stopping fermentation to soon or stressing the yeast.

Good luck with it
