After throwing away most my yeast collection due to infections (as detailed in another post), I'm using my GEB voucher I got for my birthday to replenish some of the stock. I'm looking for an interesting robust yeast I can use as a "house" strain, this one came up. I'm looking for a mostly clean profile, will be using for a range of beers from IPAs and hoppy varieties to stouts and pale malty beers (kolsch, cali-common etc) basically any style I make spur of the moment which isn't reliant on yeast. I was using San Diego Super yeast but GEB don't sell it.

I was also looking at Wyeast Denny's Favourite, but the low flocculation is a bit off putting.

I could just use US-05, but I have a vouch£r to $pend. Also just wondering if there is a better yeast strain out there.

Not impressed with Denys Favourite, I may have to ditch a brew.
Mangrove Jack M42 is becoming a favourite. It's supposed to be New World Strong Ale, but I think it's a Whitbread strain.

WLP060 is a cool yeast. Not dissimilar from 090 that you used to use.
As a blend, how reusable is it? I imagine the yeast ratios will be different each time you use it?

What weren't you keen on? Was it really so bad you have to chuck a brew?

Certainly not had any issues with reusability. No clear changes in character etc.

No, in truth, I cropped the first brew I made and pitched a new one which, after 5 weeks and a lot of stirring is still fermenting, very very slowly. It's still sweet and I wonder how it's going to turn out. No lack of foam at any time.

I've not used it myself but the WYeast/WLP scottish ale yeast would be able to do most if not all of what your looking to brew
Interesting, why did you bring up this yeast in particular?

Because it's so versatile. You have quite a list that you'd like your house yeast to be able to do, including being "mostly clean" I think the scottish ale yeast could be it, you can even pseudo lager with it as it has big temp range too. I understand it to be a popular house strain

I've been doing a lot of research on yeast strains. WLP060 was the most interesting and it appears to be a mix of WLP001, a steam beer yeast and a lager yeast. I read on some other forums that fermenting at different temperatures will bring out the different characteristics of this yeast, and realised that the steam beer yeast is what I was after.

I'm looking at WLP810 and WY2112 which are apparently the same yeast, and a Brulosophy experiment comparing these 2 strains showed participants couldn't accurately tell them apart. There are reviews of each yeast being great for hoppy styles and malty ones alike, along with high flocculation. I think I'll go for one of these, dependent on what GEB have in stock. I'm hoping WY2112, as it's named after a Rush song, and the attenuation is a little higher.

I'm sure you're aware there are dried steam beer strains, if you want to go that route?

Yeah, but with my voucher...
