Used this yeast for the first time in a Bitter and got a strange outcome. Pale 87%, Crystal 12% and black 1% were the malts And I have got huge toffee caramel aroma? Same grain bill I have used before on S04 and nottingham, but never have I had such aroma. Is it a trait of the yeast??

Ah I looked on here. and didn't think to try Whitelabs on page, didn't know you could review the yeasts :thumb:

Thats entriely my attitude but did try to bring my tastes down to their levels just for some good tasting notes at least ;)

I have used this yeast a lot, not for several years now, and always had very good results but never thought of toffee caramel coming through, but that could be my knackered taste buds. Out of interest what temperature did you ferment at.

Could be down to the attenuation of WLP005. According to the website it's 74% max which will mean it will leave it sweeter than say S-04.

WLP007 attenuates higher at 80% if you don't like it sweet!
